Baked Oven Stew


1 14 ounce can diced tomatoes (drained)

1 cup water

3 TBS quick cooking tapioca

1 1/2 tsp salt

...1/2 tsp pepper

2 pounds lean beef stew cut into 1 inch cubes

4 medium carrots cut into 1 inch chunks

3 medium potatoes peeled and quartered

2 celery ribs cut into chunks

1 medium onion peeled cut into chunks

in a large bowl combine the first six ingredients

Mix in stew meat

mix well

put in greased 13 inch baking dish

cover Bake 375 1 hour it may take longer

Spaghetti Pie,


6 ounces of spaghetti

2 TBS margarine

1/3 cup parmesan cheese

2 eggs well beaten

...1 cup cottage cheese

1# cooked hamburger

1/2 cup onion

one jar Ragu

1/2 shredded mozzarella cheese

cook spaghetti, drain, stir in parmesan cheese, add the eggs

form spaghetti mixture into a crust in a buttered 10 inch pie plate

spread cottage cheese over that, add your cooked hamburger and the ragu

put mozzarella cheese on top

bake 350 20 minutes

BBQ MEATBALLS


1 pound ground beef
1/2 cup half and half
1 cup quick cooking oatmeal
1/4 cup egg substitute
1 1/2 teaspoon onion powder
3/4 teaspoon garlic powder
1 teaspoon chili powder
1/4 teaspoon pepper
2 cups bbq sauce

Combine ground beef, half and half, oatmeal, egg substitute, onion powder, garlic powder, chili powder and pepper in medium bowl;
mix well.


Line baking sheet with foil and spray cooking spray. Shape meat mixture into 1 inch balls and arrange in single layer on baking sheet.


Cover and refrigerate meatballs at least 1 hour but no longer than 8 hours.


When ready to serve, preheat oven to 350. Pour bbq sauce over meatballs and bake 35-35 minutes

PEANUT BUTTER COOKIES


1/2 cup butter softened
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1/2 teaspoon vanilla
1 1/4 cup flour
Granulated Sugar

1. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds

. Add the granulated sugar, brown sugar, baking soda, and baking powder. beat until combined, scraping sides of bowl occasionally.


Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. If necessary, cover and chill dough until easy to handle.



2. Shape dough into 1 inch balls. Roll in sugar.


Flatten criss cross with fork.
Bake at 375 for 7-9 minutes or until bottoms are lightly browned

BROCCOLI SALAD

SAUCE
1 cup mayonnaise
1/4 cup sugar
2 tablespoons cider vinegar
(mix together well)



Then the rest is not set in stone.
I just get some broccoli (raw) and throw it in the food processor and chop it into pretty small pieces,
do the same with the purple grapes
I add crumbled bacon and some sunflower kernals
You can basically add whatever you want and just eyeball it and adjust the sauce accordingly.
It is AMAZING!

Refrigerate until cold too

CLAM CHOWDER
(I triple this recipe for the fam)

4 slices bacon
7 1/2 oz minced clams
1/4 cup onions
1/2 cup milk
10 3/4 oz Condensed cream of potato soup
Paprika



in saucepan cook bacon till crisp.


Drain, reserving 2 tablespoons drippings in pan.
Crumble bacon and set aside.
Cook onion in reserved dripping until tender.



Stir in potato soup, undrained clams and milk. Simmer uncovered 5-10 minutes.



Stir occasionally. Stir in bacon. Sprinkle with paprika

ARTICHOKE DIP


2 - 14oz cans of artichokes (packed in water)
CHOPPED

1 cup parmesan cheese ( i used just over a cup)
1 cup mozzarella cheese
1 cup mayo

MIX WELL WITH ARTICHOKES AND CHEESE

Sprinkle with salt and pepper

I cook mine in the crock pot until all the cheese is melted and it is bubbly. Serve how with crackers or whatever you want!

1 cup butter

2 3/4 cup flour

2 teaspoon cream of tartar

1 teaspoon baking soda

1/4 teaspoon salt

4 tablespoon sugar

3 tablespoons cinnamon

mix butter, 1 1/2 cup sugar, and eggs in a large bowl, mix well

mix well

in another bowl mix flour, cream of tartar, baking soda and salt

blend flour mixture into butter mixture

mix it well, chill dough for about an hour or so

then roll into 1ish inch balls, roll in cinnamon sugar mix


put on the pan.....

bake at 350 for 10 minutes

RED WINE SPAGHETTI SAUCE

One pound italian sausage


Cook, remove sausage from pan and keep the fat/grease for cooking the onions

2 large onions chopped (cook in the sausage fat for 15-20 minutes, then all 6 Garlic Cloves and cook for 1-2 minutes)

2 cups red wine

add wine to the onions and garlic
bring to a boil

add sausage to onion and wine mixture and add 1 cup boiling beef broth to it as well

bring liquid to a boil until liquid is almost completely evaporated


You will need 3-5 tomatoes chopped
2 large cans of tomato puree
2 bay leaves
1/4 tsp thyme
1 tsp oregano
1/2 tsp basil
handful cruched red pepper
salt and pepper

add tomatoes and spices and canned puree to the onion wine mixture. return sauce to a boil lower heat and let simmer for 30 minutes or longer depending on how thick you want it, remove bay leaves and serve!

CHICKEN ENCHILADAS

One pound of chicken
One onion chopped well
Roll chicken in 12-14 tortillas
1 can olives, sliced, 1 can diced green chilies and the onion
16 oz sour cream
mix it all together
mmmmmm
spread on to the tortillas
sprinkle top with cheese
Bake at 350 for 30 minutes

CHOCOLATE MUFFINS

2 eggs
1 cup  sugar
1 cup  all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla
2/3 cup  milk
2/3 cup  butter
4 oz  semisweet chocolate chips (optional)



Instructions:

Preheat oven to 350
Grease 6 extra large muffin tins or cups (paper muffin bake cups are recommended) or 12-15 medium cups.


Beat the eggs with sugar








mix with flour, cocoa powder, baking powder, vanilla and milk.




Fold in the melted butter.




Add chocolate chips (please note that these might end up in the bottom of the muffin).



Bake at 350 degrees until a until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins, about 20 minutes for medium size muffins.
